Carolina-Style BBQ Ribs
Ingredients:
For the ribs:
- 2 racks of pork spare ribs (about 3-4 lbs each)
- 1/4 cup yellow mustard
- 1/4 cup apple cider vinegar
For the dry rub:
- 1/4 cup brown sugar
- 2 tbsp paprika
- 1 tbsp black pepper
- 1 tbsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cayenne pepper (adjust to taste)
For the Carolina-style BBQ sauce:
- 1 cup apple cider vinegar
- 1/4 cup yellow mustard
- 2 tbsp ketchup
- 2 tbsp brown sugar
- 1 tsp hot sauce (like Texas Pete)
- 1/2 tsp red pepper flakes
- 1/4 tsp black pepper
Instructions:
- Remove the membrane from the back of the ribs.
- Mix the yellow mustard and apple cider vinegar, then brush this mixture all over the ribs.
- In a bowl, combine all dry rub ingredients. Apply the rub generously to both sides of the ribs.
- Wrap the ribs tightly in plastic wrap and refrigerate for at least 2 hours, preferably overnight.
- Preheat your grill or smoker to 225°F (107°C).
- Remove the ribs from the refrigerator and let them come to room temperature.
- Place the ribs on the grill, bone side down. Cook for about 4-5 hours, or until the internal temperature reaches 190°F (88°C).
- While the ribs are cooking, prepare the BBQ sauce by whisking all sauce ingredients together in a bowl.
- During the last 30 minutes of cooking, brush the ribs with the BBQ sauce every 10 minutes.
- Once done, remove the ribs from the grill and let them rest for 10-15 minutes.
- Slice the ribs between the bones and serve with extra BBQ sauce on the side.
